Sausage and Peppers Gnocchi Sheet Pan Meal

Gnocchi, also known as little potato pillows.
Time: 35 Minutes

Welcome back to Sheet Pan Sundays where I share a recipe where all you need is a sheet pan to throw together an easy and delicious meal to end the week. On the menu today is a riff on the classic sausage and peppers. Not only is this dish comfort in a bowl, but it includes gnocchi, aka, one of my personal favorite things in the world. They're so incredibly versatile and so easy to cook. Hypothetically they're also very easy to make from scratch (at least that's what my sister says). Meanwhile, every time I attempt to make them, they end up as mushy blobs. One time, after literally I think two hours of slaving away (for the record they should absolutely NOT take that long to make), I got so discouraged that I ended up tossing the whole batch and ordering a pizza. That being said, the pre-made, box version is just as delicious and a whole hell of a lot easier to work with.
Ingredients

2 packages of Gluten Free Gnocchi- I like the mini kind.
13 oz Turkey Sausage or whatever smoked sausage you like (too be honest I usually just go for whatever happens to be on sale that week.), sliced into coins.
1 Red Bell Pepper, sliced
1 Green Bell Pepper, sliced
1 White Onion, sliced
2 tbsp Olive Oil
2 tbsp Italian Seasoning (if you don't have any pre-mixed, mix equal amounts of basil, oregano, rosemary, and thyme together)
1 tbsp Garlic Powder
1/2 tsp Chili Flakes
Salt and Pepper to Taste
Garnish: Parmesan Cheese (omit if dairy free)
Directions

Preheat your oven to 375 degrees.
While the oven preheats, line a large rimmed baking tray with aluminum foil.
The next step is (say it with me) a lot of rinse and repeat. Chop up the following ingredients and add them to the baking tray:
Turkey Sausage
Red Bell Pepper
Green Bell Pepper
White Onion
Add the uncooked gnocchi to the pan along with the tomato paste, olive oil, Italian seasoning, garlic powder, chili flake, and salt and pepper.
Mix everything together until all of the ingredients are evenly coated and in an even layer on the sheet tray. It's messy, but I like to use my hands for this to make sure everything is coated nicely.
Bake for 25 minutes.
Top with parmesan cheese and enjoy!
